#21 - BierMuncher's OktoberFAST Ale
Brewing tomorrow, 7/27/08.

An ale with all the qualities of a traditional Oktoberfest/Marzen lager. Designed for quick preparation for the fall and winter months. Brewing 10 gallons.


#20 - Pyramid Apricot Ale clone (Hopefully!)
Brewed 7/20/08. In primary.

Work in progress. Trying to replicate Pyramid's Apricot wheat beer. One of my personal favorite late-Summer beers.


#19 - Hobgoblin
Brewed 7/5/08. Kegged 7/19/08. Conditioning.

Brewed a 10 gallon batch per the original recipe. 1/2 Challenger, 1/2 Goldings for hops. One batch fermented with Nottingham, one with my new legion of WL Burton Ale Yeast, which may quickly become my house English yeast.


#18 - Van Morrison Brown-Eyed Ale
Brewed 5/31/08. Kegged 7/5/08.

Time to check back in on this beer... it's for the Lincoln Lagers Brew Challenge in September 08, so I've got some time. Brewed with a standard-issue kit of ingredients from which each brewer was allowed to make only certain modifications. Kind of a "Best Damn Brewer" competition. Nottingham yeast.


#17 - Amarillo SMaSH
Brewed 5/31/08. Kegged 7/5/08. Drinking right now.

Delicious pineapple and other citrus notes dominate the hop flavor in this beer, while the huge malty backbone lends great hints of honey and caramel. Easy-drinking and right about 5% ABV, this one is a must-brew. Amarillo hops are delicious.


#16 - Mint Julep Ale
Brewed 5/28/08. Kegged 7/18.

Still in synthesis, this is designed to follow the "Sweet Tea" craze that many Americans are fond of - It's using Bigelow Plantation Mint tea in the boil and in the secondary, for nice sweet spearminty taste in a pale ale. Perle hops for extra mintiness.


#15 - Sinful Stout
Brewed 5/17/08. Kegged sometime in June 08.

Split a 10 gallon batch of this with Kim, brewed it at his house. This was a BIG beer, at about 1.075 OG. It took 22 lbs of Maris Otter, plus specialty grains. Amarillo hops for a nice American taste to it. It's still conditioning in the keg right now.


#14 - Rye Hobgoblin
Brewed 3/16/08. Kegged 4/21/08. Floated in June 08.

Spicier than normal hobgoblin, used Chocolate Rye malt and Caramunich II, as well as all-US Goldings for hops..


#13 - Damn Cheeky! English IPA
Brewed 3/9/08.

6 oz total hops, including Cluster, Challenger, and Pacific Gem, as well as a special treatment to the mash water with Blackberry tea. 1.056 OG.

Still drinking 7/26/08, not bad, nice hop flavor, but some DMS notes according to the judges.


#12 - Damn Fruity! American IPA
Brewed 1/27/08. Secondary 2/23/08. Bottled, still in storage.

Featuring Simcoe, Amarillo, and Pacific Gem, this American IPA (1.060 OG) is a fruity hop bomb, with grapefruit, pineapple, orange, lemon, and berry aromas. Dryhopped with Amarillo and more Pacific Gem. Still in secondary.

Update: Turned out terrible. No comment.


#11 - SMaSH 2-Row & Hersbrucker (label) (pdf)
Brewed 1/21/08. Kegged 2/10/08. Floated very rapidly.

Single Malt and Single Hop, SMaSH for short, this is for HomeBrewTalk.com's SMaSH swap, where numerous brewers choose different single malts and single hops, brew a recipe that fits a few basic criteria, and exchange with each other for a tasting education experience. Haven't tasted this yet.


#10 - Damn Scots! Pecan 80 Schilling (label) (pdf)
Brewed 12/29/07. Kegged 1/18/08

Last place entry in the February 2007 Beer Quest - Beers of the UK. Fermented too warm, came out with banana-y esters. After a few extra weeks of mellowing, it's the perfect silky banana-nut-bready taste. This one is a tasty brew, if a little time-intensive to make. Too bad it wasn't "ripe" in time for the competition.

Brewed 12/27/07. Bottled 1/13/08.

#9.5 - Sour Raspberry Russian Imperial Stout (label)
1/2 of the batch, infused with real raspberries. Secondary fermentation with Brettanomyces In progress.

This is our anniversary brew commemorating August 8th, 2008 for HomeBrewTalk.com. I helped coordinate this recipe with Austin Homebrew so that brewers could purchase it in a ready-to-brew kit. This is a BIG beer, at 1.088, 88 IBU, 8 Malts, 8+%ABV, and was my 8th batch of beer (Not counting my Apfelwein, #8).


#8 - Ben's Vanilla Porter (pdf)
Brewed 12/15/07. Kegged sometime in June 08.

I just helped with this one, and it's living in my basement for now. We designed the recipe from scratch, and did an extract + steep full boil, and had a fun morning brewing.


#7 - "Damned Hobgoblin" - Lincoln Lagers Big Brew 2007 (label) (pdf)
Brewed 12/8/07. Kegged 12/27/07.

10 gallon batch co-brewed with Kim Theesen. Brewed outside in 17F weather, but made a good lookin' beer. OG: 1.052, malty, garnet-toned, with just a touch of English hops. Keg gone within 7 days of tapping.


#6 - Dryhop Honey Wheat Ale (label) (pdf)
Brewed 12/2/07. Kegged 12/27/07.

Light, malty, with a very nice hop bitterness. Very smooth drinker. Pours a nice tan color, fantastic head retention. Keg almost gone.


#5 - *Cheesefood's Caramel Vanilla Cream Ale (label) (source) (pdf)
Brewed 11/16/07. Bottled 12/16/07.

Dessert Ale from the HBT Forums. Uses lactose and maltodextrine for mouthfeel, and 3-4oz of real vanilla extract. Hops are slightly stronger than the vanilla at bottling. I hope this one mellows with a month or so. So far I'm not impressed, but am reserving my judgement.


#4 - *EdWort's Apfelwein (label) (source)
"Brewed" 11/06/07. Bottled 12/8/07.

Target ABV: 8.5%. Target deliciousness: Yes.


#3 - Dark Blonde Ale (label) (pdf)
Brewed 10/26/07.

Nothing special. Possibly excessive oxidation due to aeration on transfer from primary to secondary. Was supposed to be malty and honey-y. Might mellow with carbonation. Possibly a waste of 10lbs of Maris Otter though. Update: Also undercarb'd because of a calculation error with my priming sugar. D'oh! This does not bode well for this batch.

At second glance, it's not bad if you get it nice and cold. Certain bottles carb'd better than others, so a few of them are still quite drinkable. Might be good with some age.


#2 - D'Odd Porter a.k.a. Damn Fine! Porter (label) (pdf)
Brewed 10/20/07, Bottled 11/4/07.

Brewed for my friends Justin and Ashley in celebration of their wedding on 10/13. They get half the batch in bottles for their Christmas present. Justin wanted something like a vanilla bourbon porter, but I assured him that this would be, while less exotic, a damn fine dark beer. Hope I was right!

Update: I've already drunk about 1/3 of this batch, in intervals over the past month and a half. This beer gets better and better every time I try one. Printing labels this week, he's gonna be happy with this one!


#1 - Muddy Honey Brown Ale (label)
Brewed 9/22/07, bottled on 10/1/07

My first ever brew, and consequently my first all-grain brew. My entrant for the November 2007 Beer Quest competition - the theme was "Winter Ales".

Carb'd with molasses. Very interesting beer, has done well with age. Scored 12th place at the Beer Quest, and got a score of 34/50. I have a 12pk left aging, the rest is gone and missed.
